Globally it is the second-largest cereal crop behind Maize: the third largest being Rice. Wheat grain is a staple food used to make flour, livestock feed and as an ingredient in the brewing of Beer. Th husk can be seperated and ground into Bran. Wheat is also planted as a forage crop for livestocks and as straw.

In United States there are three main types of Wheat with active, liquid futures contracts traded on them: Soft Red Winter Wheat (Chicago Board of Trade), Hard Red Winter Wheat (Kansas City Board of Trade), and Hard Red Spring Wheat (Minneapolis Board of Trade). In futures vernacular, each type of Wheat is typically referred to by the city in which it is traded, such as Chicago Wheat is used instead of Soft Red Winter Wheat, while Kansas City and Minneapolis refer to Hard Winter and Spring, respectively.

Wheat is Australias most important grain crop. Over the five year period to 1995, wheat exports averaged about $2.3 billion. By world standards, Australia is a relatively small producer of wheat, accounting for only 3% of annual world production. However, about 80% of our wheat is exported. This means that Australia contributes between and 8 and 15% of world trade, making it the fourth largest exporter after the United States, Canada and the European Union.
